Mocha Brownies
If there is one word to describe these brownies, it’s decadent! Not only is the brownie itself delicious, but you top it with a coffee, chocolate and caramel topping that defies explanation. It really is that good! Thank you to Food Scientist Katie Rosenberg for this delicious addition to our recipe box.
Brownie Ingredients:
- 119 grams cold brew coffee
- 120 grams vegetable oil
- 2 eggs
- 1 teaspoon vanilla extract
- 50 grams light brown sugar
- 50 grams caster sugar
- 90 grams strong white flour
- 25 grams cocoa powder
- 83 grams chocolate chips (semi-sweet and milk)
Step 1: Melt chocolate in microwave at 50% power. After melted, stir in oil.
Step 2: In a separate bowl, whisk together eggs, sugar, vanilla extract and cold brew.
Step 3: Once cooled, add chocolate mixture to the liquid ingredients just prepared.
Step 4: Fold flour and cocoa into combined ingredients.
Step 5: Bake for 22 minutes 180oC/fan, 160oC gas 4
Topping Ingredients:
- 42 grams chocolate chips
- 48 grams caramel pieces/drizzle
- 10 grams coarse coffee grounds
Step 1: Melt together in microwave at 50% power, and add a splash of oil during the process.
Step 2: Blend together and spread on top of cooled brownie.
The topping is not meant to be as thick as a frosting and remains deliciously gooey.
