Fall Fig Balls
Combine the fall flavors of pumpkin and spice with figs, chocolate and coffee, and you’ve got the perfect start to a delicious fall treat! This recipe was developed by our house food scientist, Katie Rosenberg.
Step 1: Make the dough.
Use a food processor to combine the following ingredients until well mixed (mixture will be tacky):
- 8 small dried figs
- 40 grams oats
- 36 grams pumpkin seeds
- 57 grams pumpkin puree
- 33 grams pumpkin seed butter
- 1 teaspoon pumpkin pie spice
- Pinch salt
Step 2: Make the filling.
Stir together:
- 57 grams pumpkin puree
- 42 grams vanilla yogurt
- 28 grams light brown sugar
Step 3: Form small little balls.
Flatten out a piece of the dough in your hand and make a small divot in the center. Put a small amount of filling into the center and cover the top with a flat piece of dough and roll into a ball.
Step 4: Melt dark chocolate and dip balls on one side.
Step 5: Sprinkle dipped side with crushed coffee beans.
Step 6: Put in fridge and let rest for one hour.
